Tony studied the art of his molecular mixology with Michelin starred chefs and food scientists to understand just how technology can be used to intensify the flavours through the chemistry involved in creative food combinations. But for Tony the customer experience is not just about flavour. He seeks to choreograph the user experience in his venues through the aesthetic elements of presentation, to ensure that they look and feel every bit as good as they taste.
Tony does not work alone in his quest for pioneering new frontiers in the world of flavours and drinks. In 2007 he founded the Drink Factory in East London. In their purpose built laboratory in Hackney the business creates flavours for brands by ‘ignoring fashion and rejecting gimmicks’.
In 2012 Tony published The Cocktail Lab: Unravelling the Mysteries of Flavor and Aroma in Drink (Ebury Press), which won America’s prestigious James Beard Award for Beverage.
